::Interesting -- I've never seen the "water" kimchi. Whenever I go out it's always the fiery version.  Interestingly enough, my former Samoan girlfriend (from American Samoa, where they eat *very* bland, McDonalds-type food) loved kimchi (the spicy variety) and said that Samoans ate a lot of it.  And I guess they do in Hawaii also. :::Well that's interesting, Mr. Peirce. I thought Kimchi spread only as far as Japan, China, & Vietnam, maybe. You will probably enjoy mulkimchi, which are very difficult to find.
