Nuremberg code
As a result of the Medical Case trial at the Nuremberg Military Tribunals, the preliminary Nuremberg code: http://www.ushmm.org/research/doctors/codeptx.htm was produced, as a basic set of criteria for unacceptable experimentation.
Declaration of Helsinki
Beyond the court-oriented Nuremberg Code, the World Medical Organization created the Declaration of Helsinki, http://www.wma.net/e/policy/b3.htm. This document continues to be updated, and is a basic background document for human-source research, such as the U.S. guidelines promulgated by the Food and Drug Administration (FDA).
